Biscuit Recipe

Biscuits are small individual bread items served for breakfast, lunch, dinner, or as a snack. Plain or slathered with butter, jam or gravy, they are flaky and tender, chewy and filling. Biscuits are actually a bridge between cake and pastry. Prepared like pie dough, biscuit recipes use the same basic ingredients as cake, only they are prepared with less liquid. Most biscuits will be formed and baked immediately, unless the recipe calls for yeast. Fats like shortening or butter add flakiness and tender texture. The addition of butter will add golden color and rich flavor.

Biscuits are baked at higher than average temperatures, usually around 400 F, sometimes higher. Most biscuit recipes require proper preheating of the oven. Some biscuits react favorably to a “rising oven”, meaning that the temperature is turned up the moment they enter the oven. The burst of high heat helps the dough rise higher, creating a lighter, fluffier baked good. Depending on the type, it may be baked individually on a baking sheet with space between each, or tightly bunched in a baking dish against a neighbor. Biscuits can be sweet or savory.

1/4 teaspoon Salt
1 Garlic Clove, chopped finely
3 tablespoons Unsalted Butter
